Golden Latte Mix – What can I do with That?

Sometimes when Bec gives me an ingredient I think two things: “Good Lord, I have never heard of this?” and, “this should be fun!” When she gave me the Golden Latte mix I was a little scared!

But I thought it was a good chance to explore the magical world of turmeric which has been on my list of things to do!

Golden Latte Slice with a Walnut Crumb

I made a hot cup of this with warmed almond milk and I thought the flavours would lend themselves beautifully to a slice. I added the walnut crumb for texture and sweetness. This slice not only looked so pretty, but it also tasted divine! Super easy too!

Ingredients

    Base
  • 1 ¾ cup flour
  • 3 tablespoons caster sugar
  • ¾ cup olive oil
  • 2 teaspoons almond milk
  • ---
  • Filling
  • 1 cup raw cashews – soaked for at least four hours, overnight is ideal
  • 3 tablespoons of maple syrup
  • ½ cup almond milk
  • 3 teaspoons of golden latte mix
  • ½ cup water
  • ¾ teaspoon agar agar powder
  • ---
  • Sweet walnut crumb
  • 1 ½ cup walnuts
  • 10 pitted dried dates
  • 2 tablespoons brown sugar
  • ½ teaspoon cinnamon powder

Instructions

    Base
  1. Prepare a tart tray by lining the base with baking paper. I used a rectangular loose-bottomed tray that was 35cm x 12cm
  2. Pre-heat oven to 160 degrees Celsius
  3. Combine the flour, sugar, olive oil and almond milk in a processor until mixture comes together as a crumbly dough.
  4. Press into the tart tray and evenly distribute
  5. Bake for 20 minutes.
  6. After removing from oven, I covered with a clean tea-towel and pressed with my hands while warm to ensure that the base with firmly compacted.
  7. Filling
  8. Drain the soaked cashews and place in blender with maple syrup, almond milk and golden latte mix
  9. Blend until completely smooth and no hint of granulation from the cashew nuts
  10. In a saucepan, combine water and agar agar powder, whisk and bring to the boil.
  11. Immediately reduce heat and cook for 2 minutes on a low heat while whisking continuously
  12. Make sure you cook this for 2 minutes – the cooking process activates the agar agar so it will set the mixture
  13. Then add the agar agar mixture to the golden latte mixture in the blender and blend until smooth and combined
  14. Immediately pour over the base in the tart tin and place in the fridge
  15. Sweet walnut crumb
  16. In food processor blend until mixture comes together as a sticky crumb
  17. When the golden latte filling has set, add the crumb so that it is evenly distributed
  18. Lightly press the crumb with your hands so it comes together as a topping
  19. Leave in fridge overnight before slicing

What You Can Do With Hemp Oil and Seeds

Hemp recipe

The ingredient that was picked for me this month by Bec was Hemp Oil by Hemp Foods Australia which is an oil that is virgin cold pressed and immediately packed on the premises. I have never used Hemp Oil, so I was curious to try it.

My research showed that hemp oil is a great source of Omega-6 and Omega-3 essential fatty acids. These are great for metabolizing fat, increasing the immune system and preventing a whole range of modern-day illnesses.

Hemp Pesto Pasta

It had quite a pleasant nutty taste and can be used in ways like how you might use olive oil. It is important to note that it must be used raw or on a very low heat (no more than about 70 degrees Celsius). Hemp oil is also said to be good for the skin and hair!

Ingredients

  • ¼ cup hemp seeds
  • 1 cup raw pistachios
  • ¼ cup pinenuts
  • 70-gram basil
  • 5 cloves garlic – peeled
  • 4 tablespoon lemon juice
  • Salt
  • 1 cup hemp oil
  • Punnet of grape or cherry tomatoes
  • Seeds from one pomegranate
  • 500 grams of your favourite pasta

Instructions

  1. Combine all ingredients except the tomatoes, pomegranate and pasta in a food processor and process until smooth. Taste and add salt to taste.
  2. Bring saucepan of water to boil and add pasta and cook to perfection
  3. Before draining pasta, add ¼ cup of the hot pasta water to the pesto and process briefly
  4. Drain pasta and then combine in saucepan with the pesto sauce.
  5. Add tomatoes and pomegranate seeds and combine.
  6. Serve in your favourite bowl or dish.

The hemp that is available in edible forms is from the same species of plant as cannabis but is a different variety and is a very safe food with an endless list of benefits.

Hemp salad

Hemp seeds are technically a nut, so they have all sorts of potential uses! They are great in sweet and savoury dishes, both raw and cooked, though remember to avoid the heat with the oil.

I have been dying to make a new pesto pasta and I am also currently in love with pomegranate seeds so I thought the hemp oil and hemp seeds would made a great pesto. This was scrummy, devoured by my two taste testers Archie and Rissie, and incredibly easy!

Fig Bread with an Easy Fig Jam

When Bec chose dried figs as the ingredient of the month, I was super excited as I have meant to try a fig bread that would be ideal for a breakfast treat.

The reason I mention calories is that I am sure there is nothing low calorie about this bread or jam, but it is packed with nutrients like the potassium which is found in figs, and the recipe also has lots of fibre which will leave you feeling satisfied for hours.

I really enjoyed creating this recipe, and there was something incredibly satisfying about watching the dough rise and kneading the bread. The end result was amazing!

Fig Bread with Fig Jam

Vegan, dairy-free, vegetarian fig bread that would be ideal for a breakfast treat.

Ingredients

  • 5 cups of flour + extra for kneading
  • ½ cup maple syrup
  • 2 x 7 gram sachets of dry yeast
  • 2 ½ cups of warm water
  • 300 grams of dried figs
  • 200 grams of walnuts
  • 100 grams of pistachios
  • 1 teaspoon cinnamon powder
  • ½ teaspoon of dried ginger
  • ½ teaspoon of ground nutmeg
  • Pinch of salt
  • 2 fresh figs

Instructions

  1. Combine the water, dry yeast and maple syrup in a bowl and let sit for 10 minutes until it is bubbling.
  2. In a separate bowl, combine the flour, spices and salt.
  3. Add the yeast mixture and mix everything with either a dough hook on your mix master, or your hands until you have a sticky dough. Cover the bowl with a tea-towel and allow to rise for at least an hour.
  4. Cut the dried figs into small pieces, ensuring you remove the central stalk.
  5. Roughly chop the walnuts and pistachios.
  6. Prepare a loaf tin with olive oil and flour.
  7. Pre-heat your oven ot 180 degrees Celsius.
  8. After an hour check the dough which hopefully should have doubled in size. Add the chopped figs and walnuts and combine until distributed throughout the dough.
  9. If mixture remains sticky, add a tablespoon of flour at a time until able to knead.
  10. Knead on a floured surface for at least 5 minutes.
  11. Put in baking tin, decorate with slices of fresh figs.
  12. Bake for 10 minutes, then reduce heat to 160 degrees Celsius and bake for another 35 minutes.
  13. Allow to cool for 30 minutes before removing from the tin

People often ask me the calorie count of my recipes. To be honest, I have no idea, and I am not really interested. Rather than counting calories, I would rather focus on the nutrients and quality of ingredients.

I also think that it is really important that the food you eat is satisfying to the eye and to the tummy.

If you focus on all those things, rather than calories, you will find that you are eating well and don’t have to worry about them.

We all know people who have followed a calorie controlled diet for a certain period of time, and as soon as the period is over they rush out to find the biggest hamburger they can find!

Fig Jam

Serves: Enough condiment for one loaf of bread

Preparation time: 10 minutes

Cooking time: 30 minutes

Vegan, dairy-free, vegetarian

Ingredients

  • 270 grams of dried figs
  • 1 cup caster sugar
  • 1 ½ cups of water
  • 2 tablespoons of lemon juice
  • 1 tablespoon of fennel seeds

Instructions

Combine the water, lemon juice and sugar, stir with a spoon.

  • Bring to the boil and simmer for 5 minutes or so.
  • Chop figs into small pieces removing the central stem
  • Add the fennel seeds and figs to water and allow to simmer for up to 20 minutes when the mixture should be thick and ‘jammy’.
  • If the mixture is too thick, add water, one tablespoon at a time and stir until it has desired consistency

Serve jam on thick slices of the fig bread – it is beautifully toasted. A lovely breakfast treat!

The Benefits of Drinking Green Tea

Green tea has a tremendous and irresistible amount of benefits so much so that literally millions of people around the world consume green tea almost daily, it been used for thousands of years primarily in Asia initially, It has now become a popular health beverage throughout the world.

The benefits of green tea are related to its antioxidant contents and nutritional values.

Polyphenols are a type of antioxidant thought to be even more powerful than the vitamins in our antioxidants including vitamin C and vitamin E.

Drink this tea to give your health a boost. It is tasty and healthy.

HEALTHY HEART.

Drinking green tea has been proved to significantly reduce the risk of cardiovascular diseases, green tea is rich in catechins, catechins are a type of compound which are potent antioxidants.

Many of the most health benefits of green tea are attributed to its most present catechins.

Also, rich in polyphenols which are naturally occurring chemicals found in beverages and certain fruits and vegetables.

Polyphenols have strong anti-inflammatory effects. Green tea’s antioxidant and anti-inflammatory effects work together in the body to lower blood pressure and reduce the risk of strokes and coronary heart diseases.

BURN FAT.

The catechins in green tea are also responsible for giving us metabolism boost and burning fat. If you drink green tea before exercising it would increase the amount of fat you burn while you work out and for the resting period immediately afterwards as well.

In a 2008 study by the American Journal of Clinical Nutrition twelve men who exercise for thirty minutes were given green tea extract and they burn  17% more fat than the men who did not take the extract.

Green tea extracts have been shown to increase fat burning during moderate to high-intensity exercise and it can also improve glucose tolerance and healthy adults. So a cup of green tea before exercise routine will give you fat burning results that last.

IT TURNS BACK THE CLOCK.

Green tea can improve your health so it natural it improves your quality of life and keeps you going well into your senior years.

A study in 2006  published in the American Medical Association concluded that green tea consumption is associated with reduced mortality due to all causes including cardiovascular diseases, the study conducted over ten years, followed over  40,000 thousand Japanese adults and found that people who consumed five or more cups of green tea a day lived longer, there were also fewer cases of heart disease and strokes.

If cardiovascular disease runs in your family it might be a good idea to start drinking green tea.

FIGHT ANXIETY.

Are you feeling anxious or stressed?  A cup of green is tea just what you need. According to a 2017 Swiss study, green tea has been proven to reduce anxiety and have robust positive effects on mental health.

Green tea contains l-theanine an uncommon amino acid that modulated brain functions in humans, it has been studied by researchers for the positive effects it can have on reducing anxiety l-theanine has strong calming effects and reduces stress without prompting drowsiness, it also increases dopamine levels and decreased depression.

So next time you feel a little blue drink up your green tea and feel a wave of calm wash over you.

KILL BACTERIA IN YOUR BODY AND TEETH.

Researches have shown that green tea can kill bacteria, the main element of green tea has anti-infective properties and has been shown to act as an antiviral agent against viruses like influenza A and hepatitis C since green tea has such strong antiviral properties, it can also do wonders for your oral health.

Green tea’s antiviral attributes have also been linked to a lower risk of cavities which are primarily caused by microorganisms these microorganisms can cause tooth pain, infections and even tooth loss, but green tea can fight them.

Green tea has an antibacterial agent inhibits the growth of these microorganisms in your mouth leaving you with strong and healthy teeth.

IMPROVE BRAIN FUNCTION AND LOWER YOUR RISK OF ALZHEIMER’S DISEASE.

The 2017 Swiss study also revealed that green tea develops our cognition and it beneficial to our memory and attention.

Green tea contains caffeine a stimulant.

Caffeine has been studied many times and it been shown to improve our physical alertness boost our energy levels, consolidate long-term memory and lift our overall mood and remember l-theanine the combined influence of caffeine and l-theanine is what makes green tea a brain-boosting drink.

A 2010 study saw an improvement in attentiveness a decline in tiredness, higher attention focus and improved accuracy during task switching. With the combined power of caffeine and l-theanine, green tea can improve your brain function.

DECREASE YOUR RISK OF DIABETES

Type 2 diabetics are the most well-known type of diabetes. According to the CDC, more than 29 million Americans live with a type 2 diabetes and 25% of adults in the US don’t know they have it.

Researchers tested the effects green tea would have on none diabetics to see if there was a correlation between green tea consumption and a lower risk of diabetics a study conducted in Japan over a period of five years with over 17,000 found who were regular drinkers of green tea were less likely to develop type 2 diabetic  versus people who drank very little or none.

A different study has shown that the EGCG compound found in green tea also has the potential to increase insulin sensitivity, in addition during a series of controlled trials 1,132 people were tested for the effects of green tea on glucose control and insulin sensitivity, the trials showed that green tea consumption significantly reduces fasting glucose, haemoglobin and insulin concentrations.

IT LOWERS BLOOD SUGAR.

Blood pressure isn’t the only thing that we want to lower as we age, for those who are borderline diabetic green tea could naturally help you lower your blood sugar and avoid becoming a full-blown diabetic.

By decreasing the liver’s production of glucose, green tea’s phenol’s (also known as tannins) work like insulin, assisting all types of people with diabetics.

HEALTHIER HAIR.

Green tea contains high levels of vitamin B-the same vitamin responsible for strong healthy hair.

This vitamin put important minerals in hair that been mistreated or neglected. Plus it could slow down hair loss.

This wonderful drink blocks the production of dihydrotestosterone, or DHT, which is known as the principal culprit in male and female pattern baldness

The benefits of green tea are many and we should all be drinking more.

Saludu Nebbe Salad

Saludu Nebbe is a West African salad made with black-eyed peas and it tastes delicious. The blend of flavours is light and refreshing. Since the beans need to soak, it is recommended you plan ahead when preparing this salad. Enjoy!

Ingredients

  • ¼ cup fresh lime juice (about 2½ limes, juiced)
  • 1 cup chopped parsley
  • ½ cup olive oil or canola oil
  • 3 cups cooked black-eyed peas (follow package ingredients you need to soak the beans overnight for best texture and then cook them so you need to plan ahead)
  • 5 spring onions, roughly chopped
  • 1 red bell pepper, stemmed, seeded, and finely chopped
  • 1 cup cherry or grape tomatoes, chopped
  • 1 medium cucumber, seeded and finely chopped
  • 2 serrano peppers or 1 habanero or Scotch bonnet chile, stemmed, seeded, and minced
  • Salt and freshly ground black pepper, to taste

Instructions

  1. In a large bowl, mix together the lime juice and parsley.
  2. Continue mixing as you slowly drizzle in the olive oil to make a smooth dressing.
  3. Add the black-eyed peas, spring onions, bell pepper, tomato, cucumber, and minced pepper to the bowl.
  4. Season the mixture with salt and pepper and use a big spoon to toss the salad.
  5. Cover and set aside at room temperature for at least 1 hour, or refrigerate up to overnight.
  6. Serve chilled or at room temperature.
